Paul Merry

Paul is super passionate about the food we serve at Accent. He takes particular pride in his involvement with our procurement team sourcing the very best ingredients that make up each and every element of our food offer. With almost 30 years of experience spanning Michelin Star restaurants, exclusive private events, commercial retail, education and business & industry, Paul has a wealth of knowledge and experience to bring to any situation.

As a member of the Craft Guild of Chefs, Paul is well placed to keep us in touch with the pace of the current food resurgence in the UK, focusing on the very best seasonal ingredients along with up to date techniques and styles of cookery.

Having recently completed a degree in Strategic Leadership & Business Management, Paul has spent much of his time over the last 5 years developing chefs through chef academies, NVQs, apprenticeships and College placements. Working with young newcomers as well as established professionals to enhance and develop their skills both in the kitchen and back of house to support their business objectives in ever challenging circumstances.

Paul’s commitment to developing those around him and spotting upcoming talent ensures that we have the next wave of chefs ready and able to continue to deliver on our culinary promise of excellence.

Paul works alongside our operations team and chef teams to develop our food offer and the delivery of it. When he isn’t in one of our kitchens he will be out visiting new suppliers, farmers and growers checking to see what we are buying and what is new and available for our talented chefs to use out there in the business.

The Chef relief team

Our team of fantastic relief chefs cover vacancies and absences to ensure there is no negative impact on the service our clients receive, should the chef manager not be in place for any reason. They are all fully trained in the Accent bookwork systems, styles of food preparation and customer service standards.  

Whenever we mobilise a new contract, Paul or one of his team of chefs will work on site to ensure a smooth transition and that our promises become a reality.
