American courgette burger relish

  • 1kg courgettes
  • 2 medium sized red onions
  • 500ml (16 fl oz.) cider vinegar
  • 350g (12 oz.) granulated sugar
  • 2 tsp. mustard powder
  • 2 tsp. cornflour
  • 1 tsp. turmeric
  • 2 dried chillies finely chopped
  • 2 tsp. coriander seeds
  • 2 medium sized Kilner jars
  1. Finely chop the courgettes and onions put them in a large pan and pour over the cider vinegar. Stir to mix.
  2. Add the sugar, mustard, turmeric, cornflour, chilli and coriander seeds. Chilli seeds will add more heat to the relish remove or include according to taste.
  3. Stir over a medium heat until the sugar has dissolved.
  4. Bring to the boil then simmer for 45-60 minutes until the mixture has thickened to the consistency of relish.
  5. Spoon into warm, sterilised Kilner jars or non-metallic lids, seal and label. Store in a cool dark place for at least 1 month to allow the flavours to develop.
  6. Refrigerate after opening.
  7. Keeps for 6 months.
