Carrot, polenta and olive oil cake

  • 250g self-raising flour
  • 135g polenta
  • 300g sugar
  • 160g grated fresh carrots
  • 3 eggs
  • 125ml fresh milk
  • 90ml olive oil
  • Pinch of salt
  • Pinch of baking powder
  • Vanilla and orange flavour
Method: 
  1. Whisk until you double the volume of the eggs and sugar, blend carrots and milk; add that to the mix.
  2. Slow it down and add the oil and the rest of ingredients
  3. Bake it for 30 minutes at 155 C.
