Cherry loaf cake

  • 250g butter softened
  • 250g caster sugar
  • 5 eggs
  • 140g sultanas 
  • 120g pitted and chopped cherries
  • 310g plain flour
  • 11/12 level tsp of baking powder
  1. First Butter and line a 2lb loaf tin with baking parchment
  2. Then using a hand whisk cream the sugar and butter until light and fluffy
  3. Whisk the eggs into the creamed sugar and butter one by one until light and fluffy.
  4. Fold in the sieved flour and baking powder until well incorporated.
  5. Finally fold in the chopped cherries and sultanas and put the mix into the prepared 900g loaf tin.
  6. Bake at 160’c for about 55 min or until a skewer comes out clean.
  7.  Allow to cool, dust the top with icing sugar and serve.
