Spiced apple and sultana chutney

  • 2 red apples
  • 2 green apples
  • 150 grams of white onion
  • 250 ml of red wine vinegar
  • 5 grams of mixed spice
  • 25 grams of butter
  • 200 grams of Demerara sugar
  • 100 grams of sultanas
  1. First peel and roughly chop the onion.
  2. Core and chop the apples into 1cm pieces.
  3. Place a non stick pan onto a medium heat and add the butter and onions, cook for 5 minutes then add the apples and cook for a further 5 minutes.
  4. Add the sugar, vinegar and spice and cook for 10 more minutes.
  5. Add the sultanas and reduce the heat.
  6. Simmer for a further 25 minutes until the liquid is syrupy and the apples cooked but still holding their shape.
  7. When cooked place into air tight sterilised jars and seal.
  8. Allow to cool then refrigerate.
