Ingredients

  • 85g Penne
  • 5 Lemons, zested and juiced
  • 350g Red onion, finely chopped
  • 500g Feta, crumbled
  • 100g Pitted black olives
  • 50ml Olive oil
  • 2 Cucumbers, peeled and cubed
  • 500g Cherry tomatoes, quartered
  • Basil, small handful, chopped
  • Lo salt, pinch
  • Ground black pepper, pinch

Method

  1. Cook the pasta in a saucepan of boiling, salted water as per the packet instructions.
  2. Whisk together the lemon zest and juice, red onion and oil.
  3. Drain the pasta in a colander and run it under a cold tap until cooled.
  4. Stir the dressing, cucumber, tomatoes, basil, feta and olives into the pasta, check seasoning and serve.
