Fideo refers to a classic Italian pasta shape. The Italians seem to have a pasta shape for eve-ry eventuality, but this one is basically one inch pieces of this pasta – I have broken up some spaghetti strands. In reality, and small shape pasta will be more than sufficient to make a hearty bowl of yumminess. I have added some carrot and a couple of florets of broccoli that I found lurking in the bottom of my fridge, but any additions will work – as will any soup. I had a tin of vegetable, so decided to make this a veggie dish, But I could have found a tin of chicken soup and added some cut up sausage, if I had any. The combinations are endless.
Ingredients
- 1 x tin vegetable soup
- 1/2 small diced carrot
- 1/4 diced onion
- 2 florets broccoli, chopped along with the stalk
- 100g one inch pieces of spaghetti
- 2 dessert spoons vegetable oil
- Water
- Seasoning
Method
- Put a shallow pan onto a moderate heat and pour in the oil, allowing it to heat up for a minute.
- Once up to temperature, add the pasta and allow it to toast in the oil for a few minutes until it just starts to go a little darker, then add the carrot and onion.
- Allow to cook for a couple of minutes, then pour in the soup and allow to come to a simmer.
- Add the broccoli and a splash of water. It will seem wet, but the pasta cooking will thicken the soup again.
- Cook for a further six to eight minutes, adding a little more water if it’s getting too thick, until the pasta is just cooked.
- Season to taste.
