This recipe is probably the easiest recipe I have ever used – in fairness, it’s not even a recipe at all. I have stolen this from a colleague, who put these into the business a few years ago. I always add a pinch of cinnamon whenever i cook with bananas as it enhances the banana flavour, but you don’t have to. I have also made these with a teaspoon of cocoa, as a special treat for my children when they were younger. I would advise you to use a ripe banana as the sugar levels increase as they ripen and you wont need any additional sweetening.
you can also add spoonful of natural yoghurt which works really well there.
Ingredients
- 1 x Medium egg
- 1 x banana
- 1 pinch cinnamon
- Spoonfull of natural yoghurt (Optional)
Method
- Peel the banana and break up into a bowl.
- Add a pinch of cinnamon if using, and then mash really well with a fork.
- Break the egg into the same bowl and use the fork to mix together.
- Heat a frying pan over a moderate heat and brush with a little vegetable oil.
- Spoon some of the banana mixture into the pan and cook until golden.
- Flip over and cook until the second side is golden.
