CoolCucumber Pickle

Ingredients
- 2 Cucumbers, thinly sliced
- 1 Small onion, thinly sliced
- 1 tbsp Dill, chopped
- 1 tbsp Table salt
- 100ml Cider vinegar
- 125g Sugar
Method
- Put the cucumber, onions and dill in a large bowl.
- Mix the sugar, salt and vinegar and pour over the vegetables (it will look dry at this stage).
- Cover and leave overnight for the juice to run out of the cucumber (you should end up with enough liquid to cover the vegetables).
- Put vegetables and pickling liquid into a jar with a lid.
- Once opened it must be stored in the refrigerator and eaten within 1 week.
