Ingredients
- 85g Penne
- 5 Lemons, zested and juiced
- 350g Red onion, finely chopped
- 500g Feta, crumbled
- 100g Pitted black olives
- 50ml Olive oil
- 2 Cucumbers, peeled and cubed
- 500g Cherry tomatoes, quartered
- Basil, small handful, chopped
- Lo salt, pinch
- Ground black pepper, pinch
Method
- Cook the pasta in a saucepan of boiling, salted water as per the packet instructions.
- Whisk together the lemon zest and juice, red onion and oil.
- Drain the pasta in a colander and run it under a cold tap until cooled.
- Stir the dressing, cucumber, tomatoes, basil, feta and olives into the pasta, check seasoning and serve.
