Roasted Salmonwith Thai Spices

Ingredients

  • 1kg Salmon fillet, skin on
  • 250g Pak choi
  • 20g Ginger
  • 50ml Soy sauce
  • 50g Caster sugar
  • 1/2 Spring onion, bunch
  • 50ml Olive oil, pomace
  • Cracked black pepper, pinch
  • 1 Red chilli
  • Coriander, small handful, chopped

Method

  1. Trim the salmon fillet & cut into 10 even size pieces
  2. Peel & chop the chilli, ginger & garlic & mix with the soy sauce & sugar
  3. Put the salmon fillets in a lined dish and coat evenly with the marinade, leave to sand for 30 minutes before baking for 20 minutes until cooked
  4. Wash and quarter the pak choi length ways, sear in a hot pan until wilted
  5. Slice the spring onions & coriander and sprinkle over the cooked salmon fillets & pak choi to garnish
