Roasted Salmonwith Thai Spices

Ingredients
- 1kg Salmon fillet, skin on
- 250g Pak choi
- 20g Ginger
- 50ml Soy sauce
- 50g Caster sugar
- 1/2 Spring onion, bunch
- 50ml Olive oil, pomace
- Cracked black pepper, pinch
- 1 Red chilli
- Coriander, small handful, chopped
Method
- Trim the salmon fillet & cut into 10 even size pieces
- Peel & chop the chilli, ginger & garlic & mix with the soy sauce & sugar
- Put the salmon fillets in a lined dish and coat evenly with the marinade, leave to sand for 30 minutes before baking for 20 minutes until cooked
- Wash and quarter the pak choi length ways, sear in a hot pan until wilted
- Slice the spring onions & coriander and sprinkle over the cooked salmon fillets & pak choi to garnish
